Are you ready for a new recipe? I know I was pretty excited to get back to cooking after the wedding festivities calmed down. We have my in-laws staying with us for another week before they head back home to Germany. Those poor Bavarians have been subjected to my grain-free lifestyle. There is bread in our house, and I've done exceptionally well not shoving any of it down my grain-free pie hole. Go me!</span><br />

<span style="font-family: Verdana, sans-serif;">Our zucchini from the garden has been doing pretty well, so we find ourselves with a large amount to use up. No complaints here! We all know I love using zucchini noodles in place of spaghetti (see my recipe for Meat Sauce and Zoodles). Another great pasta alternative is using thinly sliced zucchini in place of lasagna noodles! If you have a mandoline, it's pretty easy to get those nice, thin slices, but you can absolutely do this without. </span><br />

<li><span style="font-family: Verdana, sans-serif;">In a large skillet, melt coconut oil over medium heat.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Add the ground chicken and onion to the skillet. Break up the ground chicken and cook through.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Add the diced tomatoes, tomato paste, and broth to the skillet and stir to combine.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Sprinkle in the garlic, sage, thyme, basil and salt, and stir. Lower the heat to low, and let simmer while you prepare the zucchini.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Using a mandoline, thinly slice the zucchini lengthwise to make the lasagna noodles. </span></li>
<li><span style="font-family: Verdana, sans-serif;">In a 9x11 baking dish, add a small amount of the sauce mixture to the bottom and spread out.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Lay down a single layer of the zucchini, then add about half the remaining sauce and spread out.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Add the second layer of zucchini, then top with the remaining sauce. </span></li>
<li><span style="font-family: Verdana, sans-serif;">Bake in the oven for about 25 minutes. The sauce should be bubbly, and the zucchini tender when poked through with a toothpick.</span></li>

We took home some kohlrabi, red onions and a big bag of green beans. It will be my first time having kohlrabi! Just have to figure out what I'll do with it.</span><br />

<li><span style="font-family: Verdana, sans-serif;">Once the green beans are cooked, submerge them into ice water to stop the cooking process. Drain the green beans into a colander and set aside.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Toast the almonds in a pan over medium low heat for about 5 minutes. Keep an eye on the almonds and move them around to keep them from burning.</span></li>
<li><span style="font-family: Verdana, sans-serif;">To make the dressing, add the avocado oil, orange juice, zest, shallots, salt and pepper to a small bowl and whisk together.</span></li>
<li><span style="font-family: Verdana, sans-serif;">In a large bowl, toss together the green beans, dressing and half the almonds. Top with the remaining almonds before serving.</span></li>

<li><span style="font-family: Verdana, sans-serif;">In a medium mixing bowl, combine the ingredients for the chicken burger and mix thoroughly with your hands.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Divide the mixture into 4 equal burger patties and place on a large plate lined with wax paper or saran wrap. Freeze the burgers for about 1 hour, or until firm. They do not need to be frozen through. You just want them to hold up with placed on the grill.</span></li>
<li><span style="font-family: Verdana, sans-serif;">While the burgers are setting up, combine the glaze ingredients except for the arrowroot flour and water, to a small sauce pan over medium heat.</span></li>
<li><span style="font-family: Verdana, sans-serif;">In a small bowl, combine the arrowroot flour with the warm water and stir. Add to the sauce pan and stir continuously until the sauce has thickened.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Remove from heat and set aside.</span></li>
<li><span style="font-family: Verdana, sans-serif;">When the burgers are firm, heat the grill to about 375F. Brush the oil of your choice on the grill to prevent the chicken from sticking. Trust me on this. It will minimize the profanity involved with grilling.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Place the burger patties on the grill and cook for 10 minutes. Flip the burgers and brush the sauce on, cooking for an additional 10 minutes or until the chicken has reached 165F.</span></li>

<span style="font-family: Verdana, sans-serif;">Note: There will likely be leftover glaze, so I recommend transferring the glaze to a small bowl to use for this recipe and save the rest in the refrigerator for another meal. You could also double the burger portion of this recipe as well if you'd like to make more. </span><br />

Hope you all had a fantastic 4th of July! We headed out to the San Juan Islands to spend time with friends and get some quiet time. We saw an amazing fireworks show on Friday evening from a grassy bluff that overlooked several of the islands. Our friend that was hosting all of us on the island has Celiac Disease, so together we planned a great menu to share with everyone that would be considerate of both of us. <li>Melt coconut oil in a large skillet over medium heat.</li>
<li>Add onion to the skillet and saute for about 5 minutes, or until the onions have started to turn translucent.</li>
<li>Add the shredded red cabbage to the skillet and saute for about 15 minutes, or until the cabbage and began to soften. </li>
<li>Drizzle 2 Tbsp of balsamic vinegar to the skillet and toss the cabbage and onions to thoroughly coat. Saute for about 8 minutes.</li>
<li>Add the remaining balsamic vinegar, thyme and cherries, and toss to combine. Cook for an additional 8 minutes, or until the cherries and cabbage have become tender.</li>

I loved the tangy dressing combined with the sweet bell peppers, salami and mozzarella cheese, and of course those salty olives. The corkscrew pasta soaked up all that dressing and was just a fun shape to eat. <li><span style="font-family: Verdana, sans-serif;">Combine all of the dressing ingredients in a jar with lid. Cover and shake to combine.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Refrigerate the dressing until ready to use.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Place a large pot of water with 2 pinches of salt on the stove and bring to a boil. </span></li>
<li><span style="font-family: Verdana, sans-serif;">While the water is coming up to a boil, run the summer squash through the spiralizer using the flat blade insert. With all the spiralized squash laid out on a cutting board, use a large knife to roughly cut into thirds. We're just looking to shorten the "noodles" some. </span></li>
<li><span style="font-family: Verdana, sans-serif;">Add the spiralized squash to the boiling water and cook for about 5 minutes, until tender.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Transfer the squash to a colander and rinse with cold water. Remove as much water as you can from the squash. Leave the squash in the colander while you prepare the remaining ingredients.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Add the squash, bell pepper, red onion, salami, olives, and mozzarella (if using) to a large bowl.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Pour about half the dressing over the salad and toss the ingredients to combine. Add more dressing as desired. </span></li>
<li><span style="font-family: Verdana, sans-serif;">Store the salad in the fridge until ready to serve. </span></li>

We have lettuce and spinach for days, and we're being overgrown with mint. The cats will be happy with our catnip production as well. We've got lots of fresh herbs, minus the basil that I promptly killed. Let's focus on the positive though. Will all the fresh herbs, it's getting time to figure out what we'll do with them all before they go bad. We're looking into a couple of methods: freezing and drying. I'll let you know how that experiment goes! </span><br />

1. Jerky! If buying store bought, be sure to check the label. Steer clear of those brands that have a list of highly processed ingredients and preservatives. 2. Almond butter stuffed dates. Using a knife, slice open a medjool date, remove the pit and stuff some almond butter in there. Then proceed to shove it all in your mouth. It's amazing! Be sure to look for unsweetened almond butter that contains only almonds and salt. This is a handy snack I like to grab when I'm in a hurry and need a little something before a workout. Who am I kidding though. It's good anytime.<br />

3. Prosciutto wrapped apple slices. I use green apples most of the time since they're less sweet, and <a href="http://balancedbites.com/21dsd">21-Day Sugar Detox</a> approved. This makes for a nice savory-sweet bite. <br />

4. Sweet potato chips with guacamole. Check out those ingredients on the store bought sweet potato chips and make sure they haven't been cooked in processed seed oils. <a href="http://www.honestchips.com/">Jackson's Honest Chips</a> are fried in coconut oil, and they are delicious! Mix up some guac, and you're good to go.<br />

Dry Rub:<br />
1 Tbsp onion powder<br />
2 Tbsp coconut sugar<br />
1 tsp garlic powder<br />
1/2 tsp paprika<br />
1/2 tsp chili powder<br />
1/4 tsp ground cumin<br />
1/2 tsp dried basil<br />
1 tsp salt<br />
1/4 tsp black pepper<br />

1/2 cup Suzie's Rockin' BBQ Sauce<br />

<b>Directions:</b><br />
<br />
<ol>
<li>Preheat the oven to 350 F.</li>
<li>Combine the dry rub ingredients in a small bowl.</li>
<li>Cover both front and back of the ribs with the dry rub, and rub into the meat. </li>
<li>Place the ribs in cake pan or baking dish. You may need to cut the rack of ribs in half to fit them in the dish. </li>
<li>Fill the bottom of the dish with water, about 1/4 inch high, and cover with foil.</li>
<li>Place in the oven for 2 1/2 to 3 hours, or until the ribs have reached an internal temperature of 145 F.</li>
<li>Pull the ribs out of the oven and brush on a thick layer of BBQ sauce. </li>
<li>Time to head outside! Heat the grill to around 400 F.</li>
<li>Place the ribs on the grill, bone side down. BBQ the ribs for about 10 minutes to help caramelize the sauce. Be careful to not let the heat get so high that the ribs are charred black. You may need to turn the grill down to low.</li>
</ol>

Note: I recommend making the BBQ sauce while the ribs are in the oven. Gives you plenty of time to let the sauce cook and cool before using.</div>

I went Mexican style with my meatza, using chorizo for the meat crust, and topping it with bell pepper, red onion, mushrooms, black olives and dollops of guacamole. You can't go wrong with guac. <br />

<li>One a shallow baking dish, form the meat into the desired shape for the crust. You'll want the crust to be about 1/4 inch thick.</li>
<li>Place in the oven for 15 minutes, or until the meat is cooked through.</li>
<li>When the meat is done, pull from the oven, and increase the temperature to 425 F.</li>
<li>Assemble the toppings on top of the meat crust, and place back in the oven for 10 minutes, or until the toppings have softened.</li>
<li>Before serving, add dollops of guacamole and enjoy!</li>

Note: The chorizo from my butcher was on the milder side. I'm a bit of a wimp with the spicy food, but this one was perfect for me. If you like more heat, look for a chorizo with extra kick. My guess would be that if it's a deep red color, it will probably be on the spicier side. Only a guess though. Feel free to use regular ground pork or beef if you prefer to season it yourself.</div>

Along with celebrating the birth of my fantastic Bavarian dude, and Mother's Day, we also figured out the dessert for our August wedding! On Saturday, we headed down to Seattle to visit Jodee's Desserts near Greenlake. Jodee is such a sweet lady, and wow, her desserts are amazing! Jodee's Desserts is an organic, gluten free, vegan bakery. We sat down for a tasting and were blown away. Her pies have a cheesecake-like consistency with a nut crust. Her truffles are to die for! It was really hard to choose what desserts we wanted to have for the wedding, but really, we couldn't go wrong with any selection. Now we're set! Feels good to check another item off the list!</span><br />

de Mayo, everyone! We celebrated early
this year, since Mondays are workout nights in our house. While we were at the butcher shop on
Saturday, we picked up an awesome looking flank steak to make carne asada. It came out great! Super tender and great flavor from the
marinade I threw together. We paired up
the carne asada with Mexican cauliflower rice, and some grilled bell peppers
and onions. I whipped up some guacamole
and shoveled it into our mouths with some sweet potato chips. Delish!
To top it all off, we had some fresh margaritas. Great way to end a very rainy day in the
northwest. Seriously. So much rain.

friends, I thought I’d share a bit of what’s been going on with me these
days. Life has been a bit unpredictable
lately. I have been dealing with some
monster abdominal pain for about a month.
It actually started over a year ago, but had faded in and out over that
time. Numerous doctor visits and scans,
and we thought we had an answer, but it turns out that wasn’t the case. It came back last month with a vengeance. So once again, back to the drawing board to hopefully figure out what could possibly be causing all this pain. It’s been rough. I’ve missed work, I’ve had to cancel plans,
and frankly I feel like I haven’t accomplished much of anything. I’m happy for the times when I’m not in pain,
but I am always on guard for when it might rear its ugly head again. I think we’re getting closer to finding the
cause, but I need to wait patiently for word from my doctor. <o:p></o:p></span></div>

frustrating when you feel like you’re doing everything right, and yet these problems
still come up. Instead of focusing on
what’s going wrong, I’m trying to remember the progress I’ve made in other
areas of my health. I have reduced my
medication for my rheumatoid arthritis and, in general, I have more energy than I ever used to.
I’m actually amazed by how much I can accomplish in a day now,
compared to my former life. <o:p></o:p></span></div>

with you all. Sometimes the things you
want to do, get overruled by the things you have to do. Right now what I have to do might look more

GIANT ham. All 18.8 pounds. Do you think we had enough for the 8 of us? We were expecting more people, but hey. Who doesn't love leftovers? We love our local, small-town butcher, and just like the turkey we purchased from them at Thanksgiving, they did not disappoint. I finished off the ham with a spiced maple dijon glaze that was lick-the-bowl good.<o:p></o:p></span></div>

weekends ago, we got together with some friends for the stuff-your-face-event
known as Pie Fest. If you couldn't guess, we eat a lot of pie. Not just sweet pies, but some great savory pies as well.
This year, I was on a quest to make a gluten-free, grain-free,
dairy-free pie. So, in typical fashion, I did not experiment ahead of time with my pie, but was winging it on
the day of the event. It’s a safe
environment for experimentation, thankfully.
Plus, I knew there would still be enough pie to go around if it was an
utter failure. <o:p></o:p></span></div>

minutes before we were set to leave, my pie filling hadn't quite set up
yet. Hmmm… guess I should have made it
the day before. Down to the wire, and
not wanting to show up empty handed, I rushed down to the local pie shop and
picked up a backup pie. There may have
been bad words used on the drive to the pie shop, and there may have been a
couple of u-turns thrown in due to a mix up on what time the shop closed. <o:p></o:p></span></div>

9x9 baking dish by greasing lightly with coconut oil and cutting parchment

sides to be able to pull the finished squares out when they’re done.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Add all the
crust ingredients to a food processor and pulse until well combined.</span><span style="font-family: Verdana, sans-serif;"> </span><span style="font-family: Verdana, sans-serif;">Scrape down the sides halfway through.</span><span style="font-family: Verdana, sans-serif;"> </span><span style="font-family: Verdana, sans-serif;">It’s ok if there are some small pieces of
pecans left.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Press the
crust mixture evenly into the bottom of the baking dish.</span><span style="font-family: Verdana, sans-serif;"> </span><span style="font-family: Verdana, sans-serif;">Using a fork, poke several holes in the crust
to keep it from bubbling up while baking.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Bake the
crust in the oven for 15-18 minutes.</span><span style="font-family: Verdana, sans-serif;"> </span><span style="font-family: Verdana, sans-serif;">The
crust should be golden brown when done.</span><span style="font-family: Verdana, sans-serif;">
</span><span style="font-family: Verdana, sans-serif;">Set aside to cool.</span></li>
<li><span style="font-family: Verdana, sans-serif;">For the
lemon filling, start by adding 3 Tbsp water to a small bowl.</span><span style="font-family: Verdana, sans-serif;"> </span><span style="font-family: Verdana, sans-serif;">Sprinkle the gelatin over the water and set
aside.</span></li>
<li><span style="font-family: Verdana, sans-serif;">In a medium
saucepan, combine the lemon juice, remaining water, honey, and lemon zest over medium low
heat.</span><span style="font-family: Verdana, sans-serif;"> </span><span style="font-family: Verdana, sans-serif;">Whisk constantly for 5-7 minutes,
making sure to not let it boil.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Temper the
egg yolks by adding half the warm lemon mixture to the yolks and whisk
constantly.</span><span style="font-family: Verdana, sans-serif;"> </span></li>
<li><span style="font-family: Verdana, sans-serif;">Add the
tempered egg yolks to the saucepan and continue to heat for 7 minutes, whisking
constantly. The sauce will begin to thicken.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Remove the
pan from heat and whisk in the gelatin until it is thoroughly combined.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Strain the
lemon mixture into a bowl and place in the fridge to cool for 20 minutes.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Once the
mixture has cooled, pour it into the crust and place in the fridge for 3
hours, or until the lemon filling has set.</span></li>
<li><span style="font-family: Verdana, sans-serif;">One more
layer to go! Again, start with 3 Tbsp water in a small bowl and sprinkle
gelatin over the water and set aside.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Combine
blueberries, remaining water and maple syrup in a medium saucepan over medium heat.</span><span style="font-family: Verdana, sans-serif;"> </span><span style="font-family: Verdana, sans-serif;">Allow the berries to open and release their
juice.</span><span style="font-family: Verdana, sans-serif;"> </span><span style="font-family: Verdana, sans-serif;">Let simmer for about 10 minutes,
stirring frequently.</span><span style="font-family: Verdana, sans-serif;"> </span></li>
<li><span style="font-family: Verdana, sans-serif;">Using a
potato masher, mash the blueberries until most of them are no longer whole.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Add the
gelatin to the blueberries and stir to thoroughly combine.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Place
blueberry sauce in a bowl and chill in the fridge for 20 minutes.</span><span style="font-family: Verdana, sans-serif;"> </span></li>

blueberry sauce is chilled, pour over the lemon filling, and continue to chill

processor, pulse the onion and garlic together until it reaches a paste-like
consistency. You may need to scrape down

paprika, salt and pepper to the food processor, and pulse to combine.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Take out 1
Tbsp of the mixture and set aside.</span></li>
<li><span style="font-family: Verdana, sans-serif;">In a large
bowl, add the mixture to the ground beef and combine with your hands. Hmmm meat fingers!</span></li>
<li><span style="font-family: Verdana, sans-serif;">Once the
meat and seasoning mixture has been thoroughly combined, roll out 1 inch
meatballs and place on a wire rack over a baking sheet. You should get 20-24 meatballs.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Cut the strips
of bacon in half. The number of strips
of bacon you will need will depend on how many meatballs you made. Hint: 1 strip of bacon for every 2 meatballs. You’re welcome!</span></li>
<li><span style="font-family: Verdana, sans-serif;">Wrap each
meatball with a strip of bacon, secure with a toothpick, and place back on the
wire rack.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Bake in the
oven for 30 minutes, or until cooked through.</span></li>

bacon burger bites are baking, add the sauce ingredients to a small saucepan
over medium-low heat and stir to combine.

pork on all sides in the hot pan.

pan to the oven and cook for 40-50 minutes, or until the pork has reached an
internal temperature of 145 degrees.</span></li>

pork has come to temperature, transfer it to a plate and cover loosely with
foil to keep warm while you make the sauce.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Place the
pan over medium heat. </span></li>
<li><span style="font-family: Verdana, sans-serif;">Carefully
pour in the balsamic vinegar to deglaze the pan. Using a rubber spatula, stir the vinegar to
loosen up the meaty bits that have stuck to the pan.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Add in the
leeks, garlic, and butter.
Continue to stir.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Once the
butter has melted completely, add in half of the bone broth. Continue to stir until the sauce has reduced
by about half.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Add in the
remaining broth and stir until the sauce has again reduced by about half.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Pour the sauce over sliced pork tenderloin, and be prepared to lick the plate.</span></li>

<li><span style="font-family: Verdana, sans-serif;">Over medium heat, brown the sausage in a large dutch oven. Once the sausage is done, transfer it to a
bowl or plate with a slotted spoon. You will
want to leave roughly 2 to 3 tablespoons of fat in the dutch oven.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Add the onion, garlic, carrots and celery to the dutch oven and sauté
until the onions become slightly translucent, about 5 minutes. </span></li>
<li><span style="font-family: Verdana, sans-serif;">Add the white sweet potatoes, bone broth, and remaining seasoning to
the dutch oven and bring to a boil.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Turn the heat down to medium-low and let simmer for 30 minutes, or
until the vegetables are fork tender.</span></li>
<li><span style="font-family: Verdana, sans-serif;">Remove from heat, and remove the bay leaf.</span></li>
<li><span style="font-family: Verdana, sans-serif;">With an immersion blender, blend the soup until about half of the diced
vegetables have been pureed. </span></li>
<li><span style="font-family: Verdana, sans-serif;">Add the sausage back in to the soup and let sit for 5 minutes or until
the sausage is warm.</span></li>
